CITRUS MARINATED MUSHROOMS

Mushrooms steeped in a citrus-herb marinade are especially delectable. Stored in a covered jar and refrigerated, they will keep for up to two weeks.

1 pound fresh medium-size mushrooms, stems removed
1 cup olive oil
grated zest of 1 medium orange
grated zest of 1 medium lemon
1/2 cup fresh orange juice
1/2 cup fresh lemon juice
2 large garlic cloves, very finely chopped
2 teaspoons salt
2 teaspoons whole mustard seed
2 teaspoons dried oregano
2 tablespoons finely chopped cilantro leaves
1/2 teaspoon cayenne
1/2 teaspoon black pepper, freshly ground

Place mushrooms, oil, orange and lemon zests, and orange and lemon juices in nonreactive saucepan over high heat; bring just to a boil and remove from heat.

Transfer mixture to glass jar or bowl, and stir in garlic, salt, mustard seed, oregano, cilantro, cayenne, and pepper.

Allow to cool completely, then cover and refrigerate, stirring occasionally, for at least 24 hours before serving.

Drain mushrooms and serve.
