THAI BEEF SATAY"Serve this dish on small skewers as an appetizer or on larger skewers for the main course." 1 lb. fast fry or sirloin steak 1/4 cup peanut butter 2 tbsp soy sauce 2 tbsp freshly squeezed lime or lemon juice hot red pepper flakes (optional, to taste) minced garlic (optional, to taste) salt and freshly ground black pepper Cut beef into long strips about 1/2 inches wide. Set aside. In medium bowl, whisk together peanut butter, soy sauce, juice, 2 tbsp water, salt and pepper until smooth. Add beef strips and stir to coat. Let stand at room temperature for 15 minutes or refrigerate for several hours. WHEN READY TO COOK:Remove beef from the peanut butter mixture. Thread strips loosely on skewers.* Broil or grill for four minutes per side or until lightly pink inside. Serve at once. *If using wooden skewers, soak them in cold water for at least 10 minutes to prevent charring during cooking.
