This is a recipe I have not tried. I've been saving it in my appetizer files because looks interesting and appears to be easy to make for entertaining, which we do a lot.
CURRIED CHICKEN BALLS Makes 4 dozen
1 package (3 ounces) cream cheese 3 Tablespoons light cream or mayonnaise 1 cup finely chopped cooked chicken 2 cups chopped dry-roasted peanuts 1 Tablespoon chopped chutney 1/2 teaspoon salt 1 to 3 teaspoons curry powder
Beat the cream cheese and cream in a medium-size bowl until smooth. Stir in the chicken, 1 cup of the peanuts, the chutney, salt and curry powder.
Shape into 1-inch balls. Roll in remaining cup of peanuts.
To make ahead and freeze: Place chicken balls on jelly-roll pan and freeze until firm. Layer in rigid plastic containers with plastic wrap between layers. Return to freezer. Maximum recommended freezer storage: 3 months.
To serve: Defrost in refrigerator for 3 to 4 hours.
