Two ingredients I can guarantee in the recipe for Pollo Inka's Aji Sauce are:
Lettuce Aji Amarillo
These came by word of mouth from someone who knew the owners when they opened their first location in Lawndale (when it was only 1 store wide), and before they guarded the recipe. It's been so long that I cannot recall the rest of the list. Also, Jalepeno's with the seeds removed are stuck in my head on this one too.
I hope someone can nail it. We eat at various locations frequently, and I know the recipe is not consistent. It can vary from week to week, and between locations.
