If you want a sorbet as good as the one you had in France (or especially in Monte Carlo- where only the best of the best is served). That means cooking (poaching) fresh pears that morning or the night before. Use normal sugar and make the sorbet the way you'd make any other sorbet.

Pear sorbet probably also had a touch of lemon in it and/or apple.
