8-29-99 Budget Recipes

Sara,.MN 02:54:22 I make this lots of time when my family is hope for the week-end. You can make it up ahead, not cook it, and put it in the refrigerator till ready to bake. You can vary it a lot according to what you have in your cupboard.

Hamburger Hot Dish
2 Boxes chili Tomato Hamburger Helper Mix
2 Pounds Hamburger browned and drained
1 large onion, chopped and sautéed with the hamburger
2 cans mex style corn (the one with the red and green peppers in)
1 large can chopped tomatoes
2 cans chopped green chilies, drained
1 can sliced black olives, drained
4 large cloves garlic chopped
I usually add some more chili powder and salt and pepper.

Mix up hamburger helper mix, but use less water to compensate for the tomatoes. Add everything else and let simmer till pasta is soft. Lots of time I bake it in the oven covered.Fran,.ME 05:45:14 Hinckely Casserole

1 1/2 lb. hamburger
1 12 oz. pkg. noodles
5 cups tomato/ v-8 juice (but you may need extra)
1/2 c. red wine
1 c. sour cream
1 1/2 T. Worcestershire sauce
1/3 c. cooking oil
s/p to taste
1 T. celery seed
1 large each onion and gr. pepper
1 c. celery

Chop veggies
Brown burger and veggies in oil in large pot
Add uncooked noodles
Mix juice, wine, sour cream, Worcestershire and spices well and pour into pot over the noodles
Let pot come to boil, quickly reduce and simmer 45 minutes or till done. Add extra juice if needed!Fran,.ME 05:56:58 Canadian Cheese Breakfast Bake
(serves 12-16)
1 medium onion, finely chopped
1/2 c. butter
1/2 c. all-purpose flour
4 c. milk
1 1/2 c. shredded Swiss cheese
1/ c. diced Canadian bacon
1/3 c. pimento (small jar)
1 dozen hard-boiled eggs, quartered
Salt and pepper
1 1/2 c. soft bread crumbs
3 Tbsp. butter, melted

12-24 hours in advance...
Sauté onion in butter till tender.
Blend in flour and salt/pepper.
Stir in milk, cooking till bubbly.
Add cheese and pimento and stir till cheese melts.
Place half the eggs and bacon in bottom of a 3 QT casserole and spoon 1/2 sauce over this, repeating layers.
Cover and chill up to 24 hours.
When ready to serve, remove from fridge and place in pre-heated 350 degree oven. Bake for 45 minutes, then remove and sprinkle with buttered crumbs, baking for 15 more minutes till golden.
Great for Sunday mornings!

(generally known as Chop Suey)
2 c. macaroni- cooked and drained
1 1/2 lb. hamburger
1 large onion, chopped fine
2 cans tomato soup
1 small can tomato paste
Salt/pepper to taste

Brown the beef and onion in butter, in large skillet
Add tomato soup, paste and macaroni to beef when it has browned
Add s/p to taste

Allow to simmer awhile to impart flavor.
Can be served immediately, or made a day ahead and reheated.

1 package chocolate cake mix
8 oz. sour cream
1 small package chocolate pudding mix
1 cup chocolate chips
3/4 cup oil
4 eggs
1 cup water

Spray crockpot with PAM. Mix cake mix, sour cream, pudding mix, chocolate chips, oil, eggs, and water in bowl by hand. Pour into crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours. 5 c coarsely shredded zucchini
5 c coarsely shredded yellow summer squash

1/2 tsp salt
8 beaten eggs--yes!!! 8 of them
2 T parsley
2 cloves minced garlic
1 T finely chopped onion
1 T snipped dill
1/8 tsp pepper
8 oz. crumbled feta cheese
5 sheets phyllo dough, thawed
1/4 c butter, meltedPreheat oven to 350. In a large mixing bowl combine zucchini, squash and salt. Let stand 15 minutes. Place mixture in colander and squeeze to drain. In same bowl combine eggs, parsley, garlic, onion, dill and pepper. Stir in squash mixture and feta cheese. Spoon into ungreased 9x13 pan. Cut phyllo sheets in half crosswise. Lightly brush a sheet of phyllo with some butter. Place phyllo on squash mixture. Top with another sheet of phyllo. Brush with more butter. 4 T butter
6 c mushrooms(equal parts shiitake, crimini and button)

1 C leeks, chopped-white part only
1 C kale, chopped

Add: 2 C wild rice, cooked

Thicken with:
4 T flour

Blend in:
2 C chicken broth
2 C half and half

Add for flavor:
2 T fresh chopped chives
2 T fresh chopped parsleySauté mushrooms, kale and leeks in 4 T butter. Add wild rice. Add the flour, stirring into mushroom mixture. Slowly add the chicken stock and half and half. When the soup is hot, add the chives and parsley. For an even richer soup, stir in 1 T of butter.Becky,LA 10:33:50

CASSEROLE MIX AND CASSEROLE IDEAS

3 cups onion -- chopped
2 cups celery with leaves -- chopped
2 cups bell pepper -- chopped
1/2 cup parsley -- dried/ crumbled
2 tablespoons Creole seasoning
4 pounds ground chuck
5 cans mushroom soup

Sauté onion, celery, peppers until tender ( use oil if you wish).
Add ground chuck sauté until browned. Drain fat.
Add soup, parsley, and Creole seasoning. Simmer 5 minutes.
Cool.

Divide and freeze in 2-3 cup portions to be used to make quick casseroles.

BEEF/POTATO- LAYER POTATO SLICES, GRATED CHEESE AND MIX IN BAKING DISH. TOP WITH CHEESE. BAKE COVERED 45 MINUTES.

RICE/GREEN BEAN-LAYER COOKED RICE, GREEN BEANS, AND MIX IN CASSEROLE. TOP WITH BREAD CRUMBS. BAKE UNTIL BUBBLY.

MEXICAN- ADD 1 CAN ROTEL TO MIX. LAYER IN CASSEROLE WITH NIBLET CORN, CHILI BEANS, CHEESE, CRUSHED CORN CHIPS OR RICE AND MIX. TOP WITH CHIPS AND CHEESE. BAKE UNTIL BUBBLY.

ITALIAN-ADD 1 CAN ITALIAN TOMATO SAUCE WITH MIX. ADD 1/2 TEASPOON ITALIAN SEASONING, 1/2 CUP PARMESAN CHEESE AND 3 CUPS COOKED SPAGHETTI. TOP WITH PARMESAN. BAKE UNTIL WARMED THROUGH.

MAC/CHEESE- STIR TOGETHER COOKED MACARONI, VELVEETA AND CASSEROLE MIX ADD STEAMED BROCCOLI IF YOU WISH.

SPICY PINTO BEANS

1 pound pinto beans -- soaked overnight
1 pound ground chuck -- cooked and drained
1/2 pound ham -- chunks
1 1/2 cups onion -- chopped
1/2 cup bell pepper -- chopped
1 tomato(chopped) or -- 2 TBS. tomato paste
2 teaspoons chili powder
1 teaspoon garlic -- minced
salt and pepper -- to taste
water

Soak beans over night. Drain water.
Add fresh water and all other ingredients.
Cook on high in crockpot all day.
Or cook in cover pot on stove about 2 hours or until tender.

JAMBALAYA

oil
1 chicken -- cut up or boned
1 pound sausage
2 cups onions -- chopped
1 cup celery -- chopped
1 cup green pepper -- chopped
1 tablespoon garlic -- chopped
2 cups long grain rice
3 1/2 cups stock or stock substitute
1 heaping tsp salt
cayenne pepper to taste
1 cup green onions -- chopped

Season and brown chicken in oil (lard, bacon drippings) over med-hi heat. (I sometimes use boiled or left over baked chicken.) Add sausage to pot and sauté with chicken. Remove
from pot.
* If you want shrimp--sauté and remove from pot. Sauté onions, celery, green pepper and garlic to the tenderness that you desire.
Return chicken and sausage to pot. Add liquid and salt, pepper, parsley and other desired seasonings (I use about a teaspoon of Creole seasoning instead of salt and a few dashes of hot sauce) and bring to boil. Add rice and return to boil. Cover and reduce heat
to simmer.
Simmer for 20 minutes minutes. After 10 minutes of cooking, remove cover and quickly turn rice form top to bottom completely. Add green onions, if desired. Return seafood here. Return cover and continue cooking 10 minutes.
After total of 20 minutes stir once, remove from heat,
let sit 10 minutes.

** Most Cajuns make brown jambalaya. If you like the tomatoey New Orleans or Creole style----For red jambalaya, replace half of stock with tomato sauce.
NOTE: This makes lots, but it freezes well.
