28oz 1 can stewed tomatos
1 tsp. salt
1 tsp pepper
1 tsp minced garlic
1 tsp cilantro
1 tsp hot taco mix
1 half ground oregano
1 half tsp chilli pequinos
2 tsp minced onion
1 tsp cerrano chillied

blend all in blender

1/2 cup all purpose flour
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon pepper
4 boneless cutlets (veal or pork-I prefer the pork)
1 egg
2 tablespoons water
1 cup dry bread crumbs
1/4 cup oil
1 lemon, cut into wedges, if desired

Mix flour, salt, paprika, and pepper. Coat cutlet with flour
mixture. Pound to 1/4 inch thickness. Beat egg and water until
blended. Dip cutlet into egg mixture, then coat with bread
crumbs.
Heat oil in skillet over med-high heat. Cook cutlets about 10
minutes, turning once. Serve with lemon wedges.
For Jager (pronounced Yager) Schnitzel, buy a packet of
brown mushroom gravy and serve over it. I usually fry up some
hashbrowns seasoned with a little curry powder. Will
microwave fine. Just be sure to blot the meat with papertowels
after cooking so they don't get soggy from the oil.
Also, check the market for red cabbage that's sold in a jar. It's
a german thing too.

100 g Butter oder Margarine
1 unbenandelte Zitrone (Saft
- und Schale)
Salz
Pfeffer
1 tb Kapern
1 bn Salbei

Aal waschen, trockentupfen und in mundgerechte Stuecke schneiden.
Aalstuecke im heissen Fett ca. 10 Minuten braten. Abgeriebene Zitronenschale,
-saft, Salz, Pfeffer, Kapern und Salbeiblaetter zugeben. 2 Minuten mitbraten.
Nach Wunsch mit Zitronenscheiben und Salbei anrichten.
Dazu passen Salzkartoffeln.
Pro Person ca. 820 kcal (3440 kJ)
Zubereitungszeit: ca. 30 Minuten.

2 cn Whole chestnuts, drained
(11 ounces each)
1 cn Condensed consomme'
1 tb Butter
1/3 c Light cream

In a saucepan combine chestnuts, celery, and
consomme'. Boil until consomme' is absorbed. Press
chestnuts through a sieve or whirl in a blender. Stir
in butter and cream. Serve with Wild Boar.

NOTE: Chestnut Puree is also an excellent accompaniment for
turkey, fillet of beef, and lamb.

Marie/ME (06:34:15) : I have a recipe that calls for 2 lbs of chesstnuts-Blanch and peel the chestnuts and cook until soft....then rub through a seive.......Make a sirup of 1/2 cup sugar and 1/4 cup of water..add one tablespooon of vanilla and chestnuts and stir until the mixture is smooth...Place in a ring on a plate.. Cok 4 apples, until soft, mash them, add 1 tablespoon of buter, 1 teaspoon of cinnamon and 2 tablespoon of apricot jelly. Put this in the center of the chestnut ring and garnish with perserved fruits..

2 8 oz. cans almond paste
2 lg. egg whites
2 tbsp. amaretto
4 tsp almond extract
4 c. powdered sugar
1 c. cornstarch
16 oz. Hershey's special dark chocolate
5 sq. unsweetened chocolate

Preparation :
In a large bowl, cut almond paste into chunks; add egg whites, 2
tablespoons amaretto, 4 teaspoons almond extract. Mix well.
Gradually add 4 cups powdered sugar (small amount at a time) to
stiffen. Add almond extract, amaretto, sugar and cornstarch until
dough is stiff and tastes the way you like it. Chill overnight,
then roll into balls. Melt chocolates together over double boiler
(or melt in microwave). Dip balls in chocolate and chill in
refrigerator.

Marie/Me (09:59:42) : Recipe: Chocolate Covered Cherries

24 maraschino cherries
2 teaspoons fondant
1 package semi-sweet chocolate pieces

Drain cherries thoroughly. Cover
cherries completely by shaping about 2
teaspoons uncooked fondant around each
cherry. Use fondant for 24 cherries. Heat
1 package semi-sweet chocolate pieces
over hot water until partly melted. Remove
from water and stir rapidly until entirely
melted. Drop fondant-covered cherries
into melted chocolate and cover with
chocolate. Remove from chocolate with two
forks. Place on waxed paper to cool. Chill.
