Sandy,TX (11:02:33) : Craisins Oatmeal White Chocolate Chunk Cookies

2/3 cup margarine, softened
2/3 cup brown sugar
2 eggs
1 1/2 cup old-fashioned oats
1 1/2 cup flour
1 tsp. baking soda
1/2 tsp. salt
1-6oz pkg. Craisins Sweetened dried cranberries
2/3 cup white chocolate chunks

Preheat oven to 375 degrees. Using an electric mixer, beat butter or margarine and sugar together in bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in separate bowl. Add to butter mixture in several additions. Stir in dried cranberries and white chocolate chunks. Drop by spoonfuls onto ungreased cookie sheets. Bake for 10 to 12 minutes until golden brown.

Hot Chocolate to die for
for each cup, in a double boiler combine:
2 to 3 oz. milk chocolate
1 tea. butter
1/4 tea. vanilla
Stir together until completely melted and smooth. then add:
1 cup half and half or cream
add the half and half slowly, incorporating it gradually as it heats, but do not boil. Serve over a handful of miniature marshmallows and garnish with a dash of nutmeg.
variation: sub dark (semisweet choc.) or white chocolate very elegant) also try adding liqueurs; kahlua to go with milk choc., Contreau with dark choc., peppermint schnapps with white.

Add liqueurs only if you are of age, i can just here my teen now "but mom the recipes says ...."
We have made this minus the liqueurs and it is WONDERFUL!!!!
