Tomato Mint Salsa
2 medium tomates 2 tbls finely diced red onion 1 jalapeno pepper, seeded and minced 3 tbls balsamic vinegar 1/4 cup fresh mint chiffonade 2 tbls olive oil salt and freshly ground pepper to taste
Combine all ingrediants in a bowl and set aside for at least one hour before serving. Serve at room temperature.
