Truluck's Cream of Poblano Soup Recipe By :Houston Chronicle Serving Size : 6
2 tbl butter 3 poblano peppers -- seeded and diced 1/2 cup chopped onion 1/4 cup peeled, diced carrots 2 tbl flour 4 cups water 2 cups chicken stock 3/4 cup half and half 3 tbl finely chopped cilantro -- divided 1 tsp salt 1 1/2 cups fried, crushed tortilla strips 1 1/2 cups shredded Monterey jack cheese 1/2 lb chorizo -- cooked, drained and crumbled
Mely butter in heavy saucepan over med. heat. Add pepper, onions and carrots and saute until tender, about 5 min. Add flour and cook 5 min. Whisk in water and stock; mix throughly and simmer 30 min. Strain vegetables in colander, reserve liquid. Puree vegs. until smooth. Return to pan with reserved liquid. Add half-and-half, 1 tbl cilantro and salt. Heat to a simmer and remove from heat. Ladle into 6 soup bowls. Garnish each with 1/4 cup tortilla strips, 1/4 cup cheese, 1 tsp cilantro and 1 tbl chorizo.
