PALMER-BEECH VEGETABLE SOUP
This is the ultimate comfort food for me. My mama would make a huge pot of this soup and freeze what we didn't eat. It's so much better when it's made with fresh summer veggies!
1 small head cabbage, shredded 1 pound lean ground chuck, cooked and drained 3 medium green peppers, diced 3 medium sweet red peppers, diced 3 medium yellow peppers, diced 5 medium onions, chopped 3 celery ribs, chopped 1 quart medium tomatoes, peeled and seeded 6 cups beef broth 1 T. chopped parsley 1 qt. butterbeans 1 qt. zipper cream peas 1 qt. pkg. whole kernel corn 1 T. parsley 2 cloves garlic, minced Seasoned salt and pepper to taste
Combine all ingredients in a large kettle or Dutch oven; bring to a boil. Reduce heat. Cover and simmer for 2 1/2 hours or until vegetables are tender, adding beef broth or water as needed.
Enjoy the soup with your family the first night. Freeze soup in quart ZipLoc bags to enjoy months later.
