CHICKEN AND RICE PILAF
4 boneless, skinless chicken breasts Salt, pepper, and paprika 1 1/4 cups chicken broth 1 cup regular uncooked rice 1/2 pkg. dry onion soup mix 1 10 3/4 oz. can condensed cream of mushroom soup 2 T. diced red bell pepper
Sprinkle chicken breasts with salt, pepper, and paprika. Mix chicken broth, uncooked rice, onion soup mix, cream soup, and red bell pepper together; put in an 11x7x1 1/2" baking dish that has been coated with PAM. Place chicken breasts on tp of rice mixture. Cover dish with foil and freeze.
To prepare for serving, thaw chicken dish and preheat oven to 375 degrees. Bake, uncovered, for 1 1/4 hours or until chicken and rice are tender. Makes 4 servings.
This dish can be doubled easily. Bake one and freeze one. You'll have supper one night already finished. Serve with marinated vegetables and rolls. |
