ROUND-UP BEEF
5 lb round, cut into strips 1/2 c unbleached flour oil to brown meat 2 1/2 cups water 1 1/2 cups catsup 1/4 c brown sugar, firmly packed 1/2 c red wine vinegar 3 tbsp Worcestershire sauce 5 medium onions, chopped salt and pepper to taste
Dredge strips of beef in flour, salt & pepper, brown in oil.
Combine water, catsup, brown sugar, vinegar, Worcestershire, and onion. Stir well, heat and pour over beef. Bring to boil, and reduce heat.
Cook covered until beef is tender - about 2 hours, stirring occasionally. Freezes well.
