This is a very good 'last minute' side dish:

Microwave Corn Pudding

Beat together:

1 egg
1 tablespoon sugar
1 heaping tablespoon cornstarch
salt and pepper to taste
Stir in:
1 (1 pound) can cream style corn
1 cup milk

Pour in deep glass baking dish. Cook, uncovered, 5 minutes on high. Stir well. Cook 5 minutes more or until almost set in middle. Let stand, covered, about 3 minutes.
