Mexican Corn Bread Recipe By : Elizabeth Powell Serving Size : 8
1 cup cornmeal 1 cup flour 2 tablespoons sugar 4 teaspoons baking powder 1/2 teaspoon chili powder 2 eggs -- beaten 1/2 cup milk 1/2 cup butter -- melted 1 tablespoon jalapeno pepper -- chopped 1/2 cup sweet red peppers -- chopped 1/2 cup onion -- chopped 1 can creamed corn 1 cup Monterey jack cheese -- shredded
Sift dry ingredients together. Beat together milk and eggs. Beat in melted butter. Add to dry ingredients. Stir in remaining ingredients. Mix thoroughly. Pour into a greased 8" or 9" square pan. Bake 30 minutes at 400 degrees.
