Mom's East Coast Firm Bread Pudding Recipe By: Aby, OK Serving Size: 8
3-4 eggs, beaten milk (2 inches from top of casserole) 1 1/2 cups sugar 1 tsp cinnamon 1/2 tsp nutmeg dash salt 1 TBSP vanilla 3/4-1 lb. bread (any white type) Handful of raisins
Do not preheat oven until nearly prepared. Mix together everything except the bread and raisins in a 2 quart casserole, (should be about 3/4 full before adding bread), then tear bread into 1-2 inch pieces into casserole, pressing down gently with spatula as necessary to cover. (Pre-heat oven to 350 before finished tearing bread).Mixture should be slightly "soupy" Poke raisins through-out, then dot top with butter, bake for about 1 - 1 1/4 hr. Will appear nicely browned and slightly dry looking. Shake gently to see that center is done.
