ORANGE ZUCCHINI BREAD
4 eggs 1 1/2 cups sugar 3/4 cup vegetable oil 2/3 cup orange juice 2 cups zucchini, shredded and unpeeled 3 1/4 cups all-purpose flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoon salt 2 teaspoons grated orange peel or 1 teaspoon grated orange peel and 1 teaspoon lemon peel 3 teaspoons cinnamon or apple pie spice, or 1 teaspoon cinnamon and 2 teaspoons apple pie spice 1/2 cup chopped walnuts or pecans Orange juice glaze (see below)
Heat oven to 350 degrees. Grease and flour bottom only of two 8-by-4-inch or 9-by-5-inch loaf pans.
In large bowl, beat eggs until thick and lemony-colored; gradually beat in sugar. Stir in oil, 2/3 cup orange juice and zucchini. Stir in remaining bread ingredients and mix well.
Pour batter into prepared pans. Bake in preheated oven for 45-55 minutes or until pick inserted in center comes out clean. Cool 10 minutes. Remove from pans and cool slightly (completely if freezing). While bread is still warm, spread with glaze. Let cool completely, then wrap in plastic and again with foil.
For frozen loaf, let bread defrost completely, then spread glaze over top.
Orange Glaze: In small bowl, blend 1 cup sifted powdered sugar with 2-3 tablespoons orange juice.
