Zucchini-Cheddar Bread
1 cup chopped onion 1/4 cup butter 2 1/2 cups Bisquick® baking mix 1 tablespoon snipped parsley 1/2 teaspoon dried basil 1/2 teaspoon dried thyme 1/4 cup milk 3 large eggs 1 1/2 cups shredded zucchini 1 cup shredded cheddar cheese 3/4 cup toasted almonds chopped
Heat oven to 400. Grease and flour a 9 inch round layer cake pan. Cook and stir onion in butter until tender; cool slightly. Mix onion mixture, Bisquick, parsley, basil, thyme, milk, and eggs. Beat vigorously 1 minute. Stir in remaining ingredients. Spread in prepared pan. Bake at 400* for abour 40 minutes or until a toothpick inserted in center comes out clean. Cool slightly, then remove from pan. Let cool completely on wire rack. |
