2 tablespoons butter 2 medium green peppers, cut in thin strips 4 small zucchini, sliced 1/4 lb. fresh mushrooms, sliced 3/4 teaspoon salt 4 green onions, chopped 2 avocados, diced 1 teaspoon chili powder 3 cups grated Swiss cheese, divided
Fry peppers, zucchini and mushrooms quickly in butter and add salt. This may be done 2-3 hours ahead and reheated just before serving. Mix green onions, avocados, chili powder and 2 cups cheese in separate bowl. Stir in hot vegetables and top with remaining cheese. Serve as salad-vegetable combination with Mexican dinner.
