Zucchini Frittata

1 stick (1/2 cup) butter
1 large yellow onion, diced
3 bunch green nions, sliced with tops
5 small zucchini, cut in bite-size pieces
5 eggs, beaten
3 ounces Parmesan cheese, grated
10 ounces Monterey Jack cheese, grated
Salt and pepper to taste

Saute onions in butter until limp. Add cut up zucchini. Cook until softened. Add grated cheeses, beaten eggs, salt and pepper to taste. Pour in buttered 9x13 Pyrex dish.

Bake at 325 for l hour.

Serves 10-12
