Zucchini Nut Loaf Recipe By : Susan Wilson
1 1/2 cups flour 1 teaspoon cinnamon 1/2 teaspoon baking soda 1/2 teaspoon nutmeg 1/4 teaspoon baking powder 1 cup sugar 1 cup finely shredded zucchini 1 egg 1/4 cup cooking oil 1/4 teaspoon finely shredded lemon peel 1/2 cup chopped nuts 1/2 teaspoon salt
In mixing bowl stir together flour, cimmamon, baking soda, nutmeg, baking powder, and 1/2 teaspoon salt;set aside.In another mixing bowl beat together sugar, zucchini, and egg. Add oil and lemon peal; mix well. Stir flour mixture into zucchini mixture. Gently fold in chopped nuts. Turn batter into a greased 8x4x2 loaf pan. Bake in 350 degree oven for 55 to 60 minutes or till wooden pick comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on rack. Wrap and store loaf overnight before slicing. Makes one loaf. |
