Calabacitas (from my friend Gloria)
1 and 1/2 lb. squash, cut in small sections 1 and 1/2 cup fresh corn 2 cloves garlic, diced 1 large onion, chopped 2 tablespoons olive oil salt and pepper to taste green chilies
Saute garlic and onion in olive oil. Add squashes and continue to saute. Add tomatoes and green chili, salt and pepper. Toss well. Cover and cook until just tender.
