Pasta with cream of avocado and shrimp 4 Pers
500 grams of your fav. pasta (I used fettuchine) 2 Avocados 4-5 tasty tomatoes 1 white onion 1 Tblsp. olive oil salt, pepper to taste juice of one lemon fresh herbs to taste (I used thyme)
150-200 grams shrimps (without shell and vein, raw)
Prep.: peel and dice avocados dice onions very finely press out lemon juice peel tomatoes, pull out pulp and dice
put in blender avocados, onions, lemon juice, salt+pepper, herbs, and blend until very well mixed, mass should be quite smooth and like a puree, add some of cooking water of pasta if it gets to thick.
Cook pasta according to instructions
Mix hot pasta with puree, tomato cubes in serving bowl, and top with fresh shrimps - Enjoy!!!!!!
