Here's a recipe my mother used to make. It's out of an old cookbook from the 40's, the Wise Encyclopedia of Cookery. Wish I knew the exact age, but the copyright page is missing.
Spaghetti with Bacon Sauce
1 8-oz package spaghetti 1 and 1/2 cups diced bacon 1/2 cup green pepper, minced 1/2 cup onion, minced 2 cups thin tomato sauce 1 tsp. chili powder 1/2 tsp. salt 1/2 grated cheese
Cook the spaghetti, drain thoroughly. For the sauce, fry the bacon slightly, add the green pepper and onion and saute until the onion is light brown. Add the tomato sauce, chili powder and salt and cook 10 minutes. Turn the spaghetti inot a casserole or individual baking dishes. Pour the sauce over, sprinkle with the cheese and set in a 350 oven just until the cheese is melted. |
