Best Chocolate Cookies with Andes Candy Frosting These are my daughter's favorite cookies
2 cups flour 2 teaspoons baking powder 1/4 teaspoon salt 1 stick (1/2 cup) butter or margarine 6 squares (6 oz.) unsweetened chocolate 2 cups sugar 4 large eggs 2 teaspoons vanilla 50 Andes candy mints 1/4 cup granulated sugar
Mix flour, baking powder, and salt. Melt butter and chocolate in a heavy saucepan. Stir over low heat until melted and smooth. Cool to room temp. Add sugar, eggs, and vanilla. Stir in flour mixture and mix well. Cover and chill 1 and 1/2 hours. Heat oven to 300 degrees F. Roll slightly mounded teaspoons of the dough in sugar. Place 2 inches apart on greased cookie sheet. Bake 20 minutes. Place cookie sheet on wire rack. Place a Andes candy on top. When melted spread with a knife. Cool 5 minutes before removing from rack.
