QUICHE LORRAINE
Recipe By : BECKY (PAULA GREEN'S RECIPE)

1 10 in pie shell
9 slices bacon -- cooked, crumbled
5 eggs -- beaten
2 1/2 cups half and half
2 tablespoons butter -- melted
2 1/2 teaspoons onion -- minced
1 1/2 teaspoons salt
1 3/4 teaspoons Worcestershire sauce
1/4 teaspoon nutmeg
1 pound Swiss cheese
3 tablespoons Parmesan cheese

Bake pie shell 10-12 minutes at 400 degrees. Cool.
Scatter bacon over the bottom.
Combine remaining ingredients except Parmesan.
Pour over bacon and sprinkle with Parmesan.
Place pie on cookie sheet and bake at 375 degrees for 15 minutes.
Reduce oven temperature to 350 degrees and bake another 30 minutes or until firm in middle.

BECKY'S JUMBO STUFFED PASTA SHELLS

12 ounces Ricotta cheese
1 package spinach -- chopped and drained
1/2 teaspoon garlic powder
1 large egg -- beaten
1/4 cup Parmesan or Romano cheese
salt and pepper -- to taste
10 jumbo pasta shells -- cooked

2 cups spaghetti sauce
1/4 cup Parmesan or Romano cheese

Boil jumbo pasta shells. ( add 2-3 extras in case a few break)
Mix first six ingredients in a bowl.
Drain shells and rinse with cool water.
Stuff each shell with ricotta mixture place in greased casserole.
Top with spaghetti sauce( I use Grisanti's any type is fine) and cheese bake for 30-45 minutes at 350.

1 (15-inch) French bread loaf, split lengthwise
Mayonnaise
1 Tablespoon olive oil
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1/2 cup yellow pepper
1/4 cup chopped red onion
1/4 teaspoon garlic salt
3/4 pound thinly sliced deli toast beef
6 slices 3/4 ounce each American Cheese slices cut in half diagonally

Heat broiler. Place bread halves, split side up, on large cookie sheet. Broil 5 to 6 inches from heat until lightly toasted (about 1-2 minutes). Spread bread halves with mayonnaise; set aside. In a 10-inch skillet heat oil over medium high; add peppers, onion and garlic salt. Cook stirring occasionally, until vegetables are crispy tender (2 to 3 minutes). To assemble sandwich layer each bread half with 6 ounces beef, about 3/4 cup pepper mixture and 6 half slices of cheese. Broil sandwich 5 to 6 inches from heat 1 to 2 minutes or until cheese is melted. Cut each half into 4 servings

1 box large pasta shells
4 cups mashed potatoes
1/4 pound Velveeta cheese
1 small onion, sliced
1 Tbsp margarine

Cook pasta, drain. Saute onion slices in margarine. Melt cheese in the potatoes. Stuff shells with the potato/cheese mixture. Spoon onions over shells.

This is recipe my youngest son, found in a magazine, He makes it all the time for his roommates, and tells them he slaved all day ENJOY

2 Cups sliced hot links or smoked sausage
1 Can (14.5 ounces)Del-Monte (R) Diced tomatoes with Green Pepper and Onion
1 Can Chicken Broth
1 Can (15.5 ounces) white and yellow whole kernel Corn, drained
1/2 pound pre-cooked peeled and deveined shrimp, defrosted
1 Cup uncooked instant rice

1. Cook sausage in large saucepan, 4 minutes, then drain
2. Stir in tomatoes, broth and 1/2 cup water; bring to a boil. Stir in corn and rice; cover and remove from heat.
3. Let stand 5 minutes. Serve with hot pepper sauce and warm cornbread or biscuits, if desired

1 TBSP toasted sesame oil
2 TBSP tamari or soy sauce
1 tsp chili oil
1 tsp dry mustard
1 tsp red wine vinegar
1 pound spaghetti noodles
Optional: cook pea pods, cooked diced bell peppers, sliced green onions
Mix all ingredients except pasta. Cook pasta & mix with the other ingredients.
Serve cold.

INGREDIENTS:
4 large potatoes (about 2 pounds)
2 tablespoons margarine or butter, melted
1 cup shredded Colby-Monterey Jack cheese (4 ounces)
1/2 cup sour cream
1/2 cup sliced green onions (5 medium)

DIRECTIONS:
Bake potatoes in a 400 degree oven for 1 hour. Let stand
until cool enough to handle. Cut potatoes lengthwise into
fourths, carefully scoop out the pulp, leaving 1/4 inch heels.
Save pulp for another use. Set oven to broil. Place potato
shells, skin sides down, on rack in broiler pan. Brush with
margarine. Broil with tops 4-5 inches from heat 8 to 10
minutes or until crisp and brown. Sprinkle cheese over potato
shells and broil for about 30 seconds or until cheese is
melted. Serve hot with sour cream and green onions on the side.

This is the world's easiest soup. But thanks to two kinds of
mushrooms, it has lots of flavor and is appealing to the eye. Serve as
a first course with a fish or chicken entree. Serves four. Per
serving: 48 calories, 1 gram fat, 5 grams protein, 4 grams
carbohydrates, trace cholesterol, 486 milligrams sodium, 1 gram fiber.

3 cups fat-free chicken broth (canned is fine)
1 8-ounce can button mushrooms, drained
1 6-ounce can straw mushrooms, drained

In a medium saucepan, heat broth to boiling. Add mushrooms. Simmer
five minutes, stirring occasionally.

2 cans cream of mushroom soup
1&1/3 cup milk
1/2 chopped onion
1 Tbsp prepared mustard
2 cans (16oz) sauerkraut rinsed and drained
1 8oz. package of uncooked med-wide noodles
1 & 1/2lb. Polish Sausage sliced into 1/2" pieces
2 cups shredded Swiss cheese
34 c. whole wheat bread crumbs
2 Tbsp butter melted

Combine soup, milk, onion and mustard, blend well.
Spread sauerkraut in bottom of 9x13 pan. Top with uncooked noodles. Spoon soup mixture over noodles. Top with sausage then cheese.
Combine crumbs and butter in bowl. Sprinkle on top. Cover tightly with foil.
Bake at 350 for 1 hour or until noodles are done.

2 lbs ground beef
1 lg onion, chopped
2 jars(28oz each) spaghetti sauce
1 pkg (16oz) spiral pasta, cooked and drained
4 cup(16oz) shredded mozzarella cheese
8oz sliced pepperoni, optional

Cook beef and onion until meat is no longer pink; drain. Stir in spaghetti sauce and pasta. Transfer to 2 greased 13x9x2 dishes. Sprinkle with cheese. Arrange pepperoni over top. Cover and freeze one casserole up to 3 month. Bake the second, uncovered, at 350 for 25-30 min. or until heated through.

8oz med tube pasta
1 jar(28oz) spaghetti sauce, divided
1 jar(4-1/2oz) sliced mushrooms, drained
1 pkg(8oz) sliced pepperoni
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp salt
1/8 tsp pepper
1/8 tsp crushed red pepper flakes
1 can(8oz) tomato sauce
2 cup(8oz) shredded mozzarella cheese

Cook pasta according to pkg directions. Meanwhile, combine 2-1/3 cup spaghetti sauce, mushrooms, pepperoni, green pepper, onion, Parm cheese, garlic powder, salt, pepper, and red pepper flakes in a bowl. Drain pasta; add to sauce mixture and mix well. Transfer to a greased 3-qt. baking dish. Combine the tomato sauce and remaining spaghetti sauce; pour over top. Cover and bake at 350 for 40-45 min. or until bubbly. Sprinkle with mozzarella cheese. Bake, uncovered 5-10 min. longer or until cheese is melted. Yield: 9-12 servings.
