Quick Tuna Supper
l pkg pita pockets l large can solid white tuna l 16-oz pkg frozen oriental vegetables 1/2 cup mayonnaise 2 cups shredded cheddar
Cook vegetables & drain. Mix everything together and fill pockets.

4 tablespoon olive oil 1 each onion; chopped 5 each garlic; chopped 2 cans tomatoes, crushed 1 can tomato puree 1 cup red wine 1/4 cup parsley; chopped 1/4 cup basil; chiffonade
Heat olive oil in a large heavy saucepan over medium-high heat. Saute onion until clear, add garlic and continue cooking until garlic begins to turn golden brown. (DO NOT OVERCOOK GARLIC - IT WILL BE VERY BITTER). Add the tomatoes, puree and wine, and bring to a boil. Reduce heat to low and simmer for 1 hour, stirring occasionally. After an hour, add the herbs, test the seasoning and continue cooking uncover another 30 minutes.
NOTE: Great to make ahead and freeze or refrigerate for up to 2 weeks.

I like to make a mixture of melted butter, orange marmalade, raspberry jam and currant jelly with a few dashes of cloves and baste with it. The run-off into the pan drippings help make the most lovely gravy afterwards! Enjoy!

Cabbage Casserole
1 large head cabbage shredded Put in salted boiling water and cook until done. Drain Place in 13X9 baking dish.. Grate one 10oz pkg cheddar cheese (depending how much cheese you like) and mix in through the cooked cabbage..Save out 1/2 to 1 cup of cheese for later use..Make a sauce with 1 can Campbell’s Cheddar Cheese soup plus 1 can of Milk...Blend well together and mix through the cabbage then add the 1 cup of cheddar cheese to top of casserole...Crush 1 package of Ritz crackers and sprinkle along the top.. Bake at 350 degrees for 30+ mins until bubbly..ENJOY !!!

Banana Coconut Loaf
2 eggs 1 cup white sugar 1/2 cup butter, melted 1 cup mashed bananas 1/2 teaspoon almond extract 1 1/2 cups all-purpose flour 1/2 cup flaked coconut 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup chopped walnuts 1/2 cup maraschino cherries, chopped
Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.
Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted in center comes out clean. Let stand for 10 minutes, and remove from pan. Cool.
Makes 1 -9x5 inch loaf

Banana Nut Bread
1 Pound 2/3 Cup Sugar 1/4 Cup Butter 1 Egg 3/4 Cup Mashed Bananas 1/2 Tsp. Vanilla Extract 1/4 Cup Buttermilk 1-1/4 Cups all-purpose Flour 1/2 Tsp. Baking Soda 1/2 Tsp. Ground Cinnamon 1/2 Cup Chopped Walnuts/Pecans
Place all of the recipes ingredients in your bread machines fully assembled pan and in the order recommended by your machine's manual. Select the Cake, Batter or Quick Bread Cycle and press start.
When the machine is finished wait 10 minutes before remove the bread from the pan. Allow the bread to cool for at least 30 minutes after removing it from the pan before slicing.
NOTE: This recipe requires your bread machine to have a cake, batter or quick bread cycle (not the rapid yeast bread cycle that does a loaf of yeast bread in half the normal time.)

Chocolate Banana Bread
1 cup margarine, softened 2 cups white sugar 4 eggs 6 bananas, mashed 2 teaspoons vanilla extract 3 cups all-purpose flour 2 teaspoons baking soda 1/4 cup unsweetened cocoa powder 1 cup lite sour cream 1 cup semisweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large bowl, cream together margarine, sugar and eggs. Stir in bananas and vanilla. Sift in flour, baking soda and cocoa; mix well. Blend in sour cream and chocolate chips. Pour batter into prepared pans.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of a loaf comes out clean.
Makes 2 - 9x5 inch loaves

Blueberry Walnut Bread
1/3 cup margarine, softened 1/2 cup milk 2 eggs 2 1/2 cups all-purpose flour 1 cup white sugar 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1 cup frozen blueberries, thawed, drained 1 teaspoon salt 1/2 teaspoon lemon peel (optional)
In a large bowl, beat together the margarine, milk, eggs and sugar. Stir in the flour, baking powder, baking soda and salt. Carefully fold in the blueberries and walnuts. Fold in lemon peel if desired.
Spray bread machine pan with cooking spray. Pour mixture into bread machine pan and put pan into bread machine. Select Quick Bread/Cake cycle, and press Start. Check in 1 minute to see if mixture is well blended. Cook until cake cycle stops. Cool completely in bread machine pan before removing.
Makes 1 - 2 pound loaf

8 oz. medium noodles 3/4 stick butter melted ( 6 Tbs.) 1-(3 oz.) pkg. cream cheese melted 1/2 C. sugar 3 eggs beaten 1 C. milk 1 C. apricot nectar Topping 6 T. butter melted 1 C. crushed corn flakes 1/4 C. chopped nuts 1/2c. packed brown sugar
Butter a 13x9 inch pan Cook noodles..drain and rinse. melt butter and cheese, blend in sugar. Mix with noodles.. Combine beaten eggs, milk, and apricot nectar..blend with noodle mixture. turn into buttered pan. Combine melted butter, corn flakes, nuts and brown sugar. sprinkle over noodles. Bake 1 hour at 350 degrees. Turn oven off and leave in oven for 20 minutes. Serves 12

1 cup sugar 1 cup pineapple juice 2 egg yolks 1 T flour 2 T oleo or butter 1 can white cherries, fruit cocktail "or" just the pineapple (all drained well) I prefer just the pineapple but the cherries were in the orig. recipe. 1/2 to 1 lb. min. marshmallows. 1 or 2 pts.(cartons) of the real whipping cream.
Cook and stir the first 5 ingredients until thick, Cool, then fold in the whipping cream, let sit awhile in fridge. Add the can fruit & marshmallows & I like to add nuts. This is a must for all our Holiday desserts
