Love it or hate it, fruitcake is a holiday classic. Here's a really simple recipe, designed to convert those who typically pass fruitcakes on to someone else. It starts with a packaged date bread mix to make things simple.
2 large eggs, slightly beaten 2 cups water 1 16-ounce package date bread mix 2 cups raisins 24-ounces mixed candied fruit 3 cups chopped pecans or walnuts
Preheat oven to 350 degrees. Combine eggs and water. Add bread mix and blend. Fold in remaining ingredients. Pour mixture into a greased and floured 9 to 10-inch tube pan. Bake 75 to 80 minutes in a 350 degree oven. Cool before removing from pan.
