Candied Sweet Potatoes with Sherry serves 10
6 large sweet potatoes (4 lbs.) 2 oranges small can of pineapple tidbits, drained 3/4 c. melted butter 1 1/2 c. sugar 1/4 c. orange juice 1/4 c. cream sherry 1 cinnamon stick 1 t. vanilla
Peel and slice raw potatoes. Slice oranges into thin slices. Layer potatoes, orange slices and pineapple tidbits in a greased casserole dish. Combine the butter, sugar, orange juice, pineapple juice, sherry and cinnamon stick. Add vanilla and stir well. Bring to a boil. Pour over potatoes, bake at 350 for 1 1/2 hours. |
