Sweet Potato Peaks Recipe By : Southern Living Magazine, Fall 1995 Serving Size : 8
2 cups Sweet potato; cooked – mashed cooled 3 tablespoons Butter or margarine -- softened 1/2 teaspoon Cinnamon 1/3 cup corn flakes -- crushed 2/3 cup Sugar 1 cup Pecans -- finely chopped 15 1/4 ounces Unsweetened pineapple slices -- drained 2 tablespoons Butter or margarine 2 tablespoons Honey 1 teaspoon Water
Combine mashed potatoes, 3 tbls butter, cinnamon, corn flakes and sugar, stirring until blended; shape into 8 cones. Coat cones with pecans; refrigerate at least 8 hours. Arrange pineapple slices in a single layer in a lightly greased 11x7" baking dish; place cones upright on pineapple rings. Set aside. Combine 2 tbls butter, honey and water in a small saucepan; bring to a boil over medium heat, stirring constantly.
Cook, stirring often, 1-1/2 to 2 minutes or until thickened; set honey mixture aside. Bake cones, uncovered, at 350~ for 30 minutes, spooning honey mixture over sweet potato cones during last 10 minutes. PATTI - VDRJ67A |
