Creamy Peas and Onions Casserole
16 oz. frozen peas 10 oz. frozen tiny onions 1 can cream of celery soup 4 oz. sour cream 1/3 cup milk 1/2 tsp salt 1/4 tsp freshly ground pepper Topping: 2 cups crushed Cheez-Its or other cheese crackers (or more, depending on size of casserole dish) 3-4 TBL butter, melted
Mix all ingredients for casserole together and place in lightly greased 2 qt. casserole (can be assembled day before to this point). Spread cracker crumbs over top and drizzle with melted butter. Bake, uncovered, in a 350F oven for about 25 minutes, or until bubbling. Do not over-brown the crust (tent with foil, if needed).
