A Norwegian classic

Hazelnut layer cake

Preheat oven to 350 degrees

Butter and flour a round cake pan.
2 eggs
3/4 cup of sugar
8 oz of hazelnuts
2 Tbls flour
2 tsp baking powder

Whip eggs and sugar until thick and foamy. Grind hazelnuts, mix with flour and baking powder and add to eggs. Bake for 35 – 40 minutes until nice and brown. Cool on rack. When cold slice horizontally, put bottom layer back in the cleaned mould or baking pan. The pan must have a loose bottom, fill with a mousse. Put top cake layer on top of mousse. Glaze top with almost stiff jello of your choice. When the mousse and jello is stiff, you take it out of the mold by lifting it up, and let the ring slide down. Transfer to a nice dish and decorate with cream and fruit.
Suggestion: Lemon or orange mousse with tinned mandarin sections mixed in. Same jello on top.
Vanilla mousse with lots of chopped cherries and chopped dark chocolate added. Cherry jello on top, decorate with whipped cream and chocolate curls.
