Crispy Peanut Butter Balls
My mom got this recipe from a friend of her mothers about 30 years ago, so it's a very old recipe.
1 cup peanut butter 1 cup icing sugar 1 cup rice krispies 1 Tbsp margarine or butter 1/2 cup chopped walnuts
Cream ingredients together, chill, then roll into small balls.
Mix together 1 cup icing sugar and 1 and 1/2 Tbsp. of boiling water. (This will be very runny). Dip each ball in the icing then roll in coconut. My mom rolls them in shredded unsweetened coconut.
The icing is not really meant to be an icing as such, it is just used to make the coconut stick to the balls, so if it cools down and thickens a bit add some more water, as you don't want a thick icing on them. In fact Mom says she sort of dips half the ball and spreads the icing with a knife over the rest of the ball. They are very good and different than the chocolate coated peanut butter balls.
