1 T dark sesame oil
1 lb. boneless chicken, cut up 2" pieces
1 cup chicken broth
1 cup water
1 T ground ginger
1/8 crushed red pepper
3 T teriyaki sauce
1 lg clove garlic, minced
1 package of frozen broccoli, carrots, red pepper, add water chestnuts
8 oz spaghetti

In skillet, heat oil over med. high heat, brown chicken. Remove to plate. In same pan bring broth, water, ginger, pepper, teriyaki and garlic to boiling. Add spaghetti. Simmer covered 8". Stir often. Stir in veggies and chicken. Bring to a boil for 4"

1 cup sugar
2 cups milk
3 T. flour
3 T. cocoa
3 eggs
1/2 stick butter
1 teaspoon vanilla
1 unbaked pie shell

Mix sugar, cocoa, and flour. Add milk and eggs. Let mixture come to
a boil. Stir vigorously. Boil until thick. Add butter and vanilla and pour
into the pie shell. Bake at 325 degrees for 20-25 minutes or until the
filling is set. Top with meringue.

Meringue

2 egg whites
1/2 cup sugar
2 T. water

Mix egg whites, sugar, and water in top of double boiler. Beat with
mixer until thoroughly blended. Place over boiling water and cook 1
minute, beating constantly. Remove from heat and continue beating
constantly until meringue stands in peaks. Pile over chocolate pie and
place in the oven just until the meringue is light brown.

Enjoy!

1 - 4# roast, chuck or bottom round
1 t. vegetable oil
1 c. bottled barbecue sauce
1/2 c. cider vinegar
1/2 c. beef or chicken broth
1/4 c. light brown sugar
1 T. mustard, prepared
1 T. Worcestershire sauce
1 T. chili powder
1 large onion, chopped
2 large cloves garlic, crushed
1 1/2 t. thyme
12 rolls

1. Heat oven to 300. 2. Brown meat in oil in a large ovenproof Dutch oven, 15 minutes. 3. Add sauce, vinegar, broth, sugar, mustard and Worcestershire, chili powder, onion, and thyme to pot. Bring to boil. 4. Bake, covered at 300 degrees for 3 - 4 hours, turning meat every hour, until tender. Let stand at least 30 minutes in pan. Slice and serve on rolls with sauce. ( I did not use thyme.)

1 cup milk
1 graham cracker crust
2 pkgs. Instant chocolate pudding (small)
6oz. pkg. cream cheese
16oz container whipped topping, divided
1 cup sugar

Combine sugar and cream cheese. Mix until smooth. Fold in 8oz of the whipped topping and spread into bottom of pie crust. Next mix pudding and milk until smooth then fold in remaining whipped topping. Chill until firm. Garnish with shaved chocolate pieces if desired.

1 pkg. graham cracker crumb crust
1 Hershey Milk Chocolate Bar (7oz.)
broken into pieces
3-1/2 cups (8oz.) frozen whipped topping

In medium microwave bowl, place candy pieces. Microwave on high for 1 minute or until chocolate is smooth when stirred. Cool Slightly. Fold in whipped topping into melted chocolate. Spoon into pie crust. Refrigerate for 6 hours or over night.

6 Hershey almond bars
1/2 c Milk
15 Marshmallows (about 1/4 lb)
1/2 pt Heavy cream, whipped
1 9 inch pie shell, cooled
-or graham cracker shell

Chop almond bars into small pieces and
melt in double boiler with milk. Add
marshmallows and stir until melted.
Chill mixture thoroughly. Fold cream
into chocolate mixture and pour into
cooled pie shell. Chill until firm
(over night for best results).
Top with whipped cream and serve.

Do not use mixer! With a wooden spoon cream together:

1 stick margarine
1 cup Sugar
1 tsp. vanilla
Stir in 4 eggs one at a time mixing well after each.
Stir in 1 16oz. can Hershey syrup and 1 Cup Flour.
Pour into greased & floured 13X9 pan.
Bake in 350 oven for 25 to 30 mins.

Icing:
As soon as cake comes from oven prepare icing.
In saucepan bring to boil:
1 Cup Sugar
1 stick margarine
1/4 cup milk

Boil for 3 mins. Remove from heat and add 4 Hershey Bars. (Regular size comes in 6 packs) Stir till smooth. Pour on hot cake. Sprinkle with chopped nuts..Let cool & refrigerate..Cut into squares.. When making them for party or for work I put squares in decorated cupcake papers..adds a nice touch..Enjoy..

1 (4 serving size) package of instant chocolate pudding mix
2 cups milk
1 (18.25 ounce package of chocolate cake mix
2 cups semisweet chocolate chips
confectioners sugar

Preheat oven to 350 degrees. Grease 15 x 10 inch baking pan.
Prepare pudding mix according to package directions using the 2 cups milk. Whisk in the cake mix. Stir in the chocolate chips. Pour batter into the prepared pan.
Bake at 350 degrees for 30 - 35 minutes or until the top springs back when lightly touched. Dust with confectioner's sugar. Serve with ice cream if desired.

1 large head cabbage shredded
Put in salted boiling water and cook until done. Drain
Place in 13X9 baking dish.. Grate one 10oz pkg cheddar cheese (depending how much cheese you like) and mix in through the cooked cabbage..Save out 1/2 to 1 cup of cheese for later use..Make a sauce with 1 can Campbell’s Cheddar Cheese soup plus 1 can of Milk...Blend well together and mix through the cabbage then add the 1 cup of cheddar cheese to top of casserole...Crush 1 package of Ritz crackers and sprinkle along the top.. Bake at 350 degrees for 30+ mins until bubbly..ENJOY !!!

Freezing Apples

Syrup pack is preferred for apples to be used for uncooked desserts or fruit cocktail. A sugar or dry pack is good for pie
making.

Select full-flavored apples that are crisp and firm, not mealy in texture. Wash, peel and core. Slice medium apples into twelfths,
large ones into sixteenths.

Syrup Pack

Use 40 percent cold syrup (see Table 1). To prevent browning, add 1/2 teaspoon (1500 mg) ascorbic acid to each quart of
syrup.

Slice apples directly into syrup in container starting with 1/2 cup syrup to a pint container. Press fruit down in containers and add
enough syrup to cover. Leave head space (see Table 2). Place a small piece of crumpled water resistant paper on top to hold
fruit down. Seal and freeze.

Sugar Pack

To prevent darkening, dissolve 1/2 teaspoon (1500 mg) ascorbic acid in 3 tablespoons water. Sprinkle over the fruit. Or, apple
slices can be steam blanched for 1 1/2 to 2 minutes.

Mix 1/2 cup sugar with 1 quart (1 1/4 pounds) of fruit. Pack apples into containers and press fruit down, leaving head space (see
Table 2). Seal and freeze.

Dry Pack

Follow the directions for sugar pack, omitting the sugar. Treated apple slices can also be frozen first on a tray and then packed
into containers as soon as they're frozen.

1/2 cup sugar
1/2 cup vinegar
1 cup water
1 tsp. mixed pickling spices
1 (1 lb. can whole green beans, drained
1 small onion, thinly sliced

Combine sugar, vinegar, water and spices in sauce pan and bring to a boil; simmer 10 minutes over lowered heat. Strain vinegar mixture over beans and onions. Cover and chill 24 hours. Serves 4.

4 medium zucchini, sliced
1 medium onion, sliced
1 (16oz) jar Cheese Whiz
1 (7oz) can green chiles

Line Casserole dish with zucchini. Spread onions on top. Add green chiles and spoon on Cheese Whiz. Cover with foil. Bake @ 350 degrees until zucchini is tender, about 45 minutes. Check tenderness with fork. Serves 6.

1 medium onion, chopped
3 tbl. flour
3 tbl. margarine
3 cubes chicken bouillon
3 cups water
2 cups cauliflower, frozen or fresh
1 1/2 cups milk or cream
1 cup grated cheese
salt and pepper to tasteSaute onion in flour and margarine. Add bouillon cubes, water and cauliflower. Cook over low heat until cauliflower is tender. Add milk and heat through. Stir in cheese until melted. Season to taste.

5 Texas Ruby-Sweet or Rio Star Grapefruit
2 cups sugar
1 cup white vinegar
1 tsp. whole cloves
2 sticks cinnamon

Peel and section grapefruit over a bowl, reserving juice. Pack sections into jars and set aside. Combine 1/2 cup grapefruit juice and remaining ingredients in a saucepan; bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Strain to remove spices. Pour hot liquid into jars, covering sections completely. Cover and cool at room temperature. Refrigerate overnight before using. Makes about 3 half pints.

1 roll Pillsbury refrigerated sugar cookie dough
1 cup sugar
1 8 oz. cream cheese, softened
1 8 oz. cool whip
1 small can crushed pineapple
fresh strawberries, cleaned, hulled and thinly sliced
bananas, sliced
shredded coconut
finely chopped pecans

Spread sugar cookie dough evenly on a pizza pan
using fingertips. Pierce a few times with fork tines
and
bake at temp listed on package until lightly browned.
If it puffs up, press down slightly after you let it cool
a
little. Cool crust completely. Beat softened cream
cheese with sugar until smooth. Fold in Cool Whip
and blend thoroughly. Spread this on the cooled
crust.
Drain pineapple thoroughly and spread evenly over
cream cheese mixture. Arrange the slices of
strawberries on top of the pineapple, then arrange the
banana slices. Sprinkle with shredded coconut and
sprinkle with pecans. Use your imagination like you
are decorating a pizza. Make believe the cream
cheese mixture is the sauce, the strawberries and
bananas are pepperoni and mushrooms, and the coconut and pecans are the cheese. It is alot of fun!

Refrigerate until serving. Cut into pizza slices to
serve.

Oven-Fried Fish-Quick and Easy

1 lb. skinless, boneless
lean fish
4 teaspoon cooking oil
1 tablespoon lemon juice
4 tablespoons plain or seasoned bread crumbs
Salt, pepper, paprika and parsley to taste
4 lemon wedges

1. Choose thin fillets and cut into four pieces.

2. Mix oil and lemon juice in shallow plate. Mix crumbs and dry seasonings
on separate plate.

3. Turn fillets lightly in oil mixture, then press into crumb mixture until
lightly coated. Arrange fillets on greased baking sheet.

4. Bake on center rack at 450 to 500 degrees for 6 to 10 minutes, until fish
is cooked through and coating is crisp.

5. Garnish with lemon wedges and parsley. Serve.

Sue's notes: I like red snapper or orange roughy. I like to use seasoned
bread crumbs.

Deviled Chip Casserole

1-16 oz. pkg small shell noodles, cooked & drained
1 lb bacon, fried and crumbled
1 can deviled ham
1 16oz carton sour cream
1 egg
3 Cups sharp cheddar cheese, shredded
Small onion, minced
About 2 cups potato chips, crushed.

In a bowl, beat egg, add deviled ham and sour cream. Toss with cooked
noodles, add minced onion. Layer half of the noodle mixture in a 2 1/2 qt
casserole. Layer half of the cheddar cheese, potato chips and bacon (in
that order). Repeat layers one more time beginning with noodle mixture.
Bake 350 for 30-35 minutes.
Serves 6

Tuna Penne

2 6oz can tuna
4-5 cloves garlic
1 tab. olive oil
parmesan cheese
1 lab. penne noodles cooked
lemon
salt pepper to taste

heat pan with oil saute garlic for about 2 min. put in tuna, noodles salt
and pepper.
dish out and sprinkle cheese and put lemon on if desired. :-9

Yield: 6 servings

1/2 c Pecans
1 t Cinnamon
1/2 c Sugar
3 can Biscuits
1 Stick of butter
1 c Brown sugar

Place pecans in bottom of Bundt pan. Combine cinnamon
and sugar. Cut each biscuit into quarters and roll in
sugar mixture. Stack biscuits in pan. Combine butter
and brown sugar. Pour over biscuits. Bake 30-40
minutes at 350.

4 can Ballard biscuits; cut in 4ths
3/4 c Sugar
1 ts Cinnamon

GLAZE
1 c Sugar
3/4 c Butter
2 tb Cinnamon

Toss the quartered biscuits in sugar/cinnamon mix and drop each into a
greased Bundt pan. Use about half of the pieces. Mix glaze ingredients,
bring to low boil. Pour over pieces in pan. Add the remaining sugared
biscuits and cover with rest of glaze. Bake at 350 degrees for 45 to 50
minutes. Cool for 5 to 10 minutes. Turn out on plate and enjoy.

KellyWA (12:00:04) :MONKEY BREAD
Yield: 6 servings

1 Handful nuts, such as walnuts or pecans
3 5/8 oz Butterscotch pudding or pie filling (1 package)
*** Do not use instant ***
20 Frozen bread rolls (Bridgeford brand)
1/4 c Brown sugar
1 ts Cinnamon
1 dash Salt
1/4 lb Butter or margarine, melted

Spray a bundt pan with vegetable cooking spray (PAM). Put the nuts in the
bottom of the pan. Sprinkle the dry pudding mix over the nuts. Arrange the
frozen bread rolls evenly over the pudding. Mix the sugar, cinnamon, salt,
and butter together and pour over the top of the rolls. Cover and
refrigerate overnight or cover and place in a draft-free place until the
rolls thaw and rise to the top of the pan. Bake at 350 degrees for 25 to
30 minutes or until the top is a deep golden brown. Cool for 5 minutes.
Invert and serve.

6 cups potatoes, sliced
1 medium onion, chopped
1 1/2 cup cubed ham
1 cup shredded American cheese
1 10 3/4 ounce can cream of mushroom soup
1/4 teaspoon thyme

In slow cooker, layer half of each of the potatoes, onion, ham, & cheese; repeat layers. In small bowl, combine soup, milk, & thyme; pour over top. Cover; cook on high setting for 1 hour. Reduce to low setting & cook for 6 - 8 hours or until potatoes are tender.
