Victoria__Pa (12:52:12) : CHEEZY DEVIL SANDWICHES

4 slices bread
2 cans deviled ham spread
1 tomato, thinly sliced
4 slices white American cheese

Spread each slice with some of the ham spread,top with some of the tomatoes and then cheese. Wrap loosely in foil so cheese is not touching. Place on campfire rack for 10-15 min.

Kelly~WA (11:04:01) : Campsite Cobbler

1 Box yellow cake mix
2 cups bisquick
1 can (No.2) sliced peaches
1 can (No. 2) Pineapple, cherries of blueberries
Heavy duty foil

1. Heat up coals (you'll need around 24)

2. Line Dutch oven with aluminum foil. Spray with nonstick spray.

3. Spread sliced peaches evenly on bottom of oven. Save juice.

4. Mix together cake mix, bisquick, peach juice, canned fruit in large
mixing bowl and pour over peach slices.

5. Set Dutch oven over 10 hot coals and add 12-14 coals to oven lid. Bake
for 50 minutes until it doesn't stick to a straw (or toothpick).

6. Flip finished cobbler onto aluminum foil and peel off foil from cobbler
or just serve right from the pan.

Kelly~WA (10:57:56) : Sauteed Sausages and Apples

1 lb. brown and serve sausages
2 apples, pared, cored, sliced
1/4 c. sugar
1 1/4 c. pancake syrup
1/4 c. brandy (optional)

Cook sausages in large skillet over campfire or stove until browned. Add
apples; cook 2 minutes. Sprinkle sugar over apple mixture; cook until sugar
is melted and apples are glazed. Stir in syrup; cook until bubbly. Stir in
brandy; flame if desired. Spoon mixture over Cheese French Toast, if
desired. Serves 4.

Yield: 8 Servings

1 12-inch Dutch oven
1 md Onion, chopped
1/2 lb Bacon, cut into small pieces
1 pk 32-oz. hash brown potatoes
12 Eggs
1 1/2 lb Cheddar cheese, grated
1 8-oz. jar of salsa

Preheat Dutch oven over 10 charcoal briquettes and preheat lid with 14
briquettes.

Brown 1/2 pound bacon. Add onion and cook until clear.

Remove bacon and onions from Dutch oven and drain on paper towels.
Wipe excess grease out of Dutch oven and place back over hot briquettes.

Stir in the 32-ounce bag of hash brown potatoes.

Fry until potatoes are golden brown, then mix the bacon and onions
back in.

Break 12 eggs into medium mixing bowl and beat thoroughly. Pour over
potatoes, bacon and onions. Cover with hot lid and cook until eggs
are almost solid.

Sprinkle with 1 1/2 pounds grated cheddar cheese.

Continue cooking until eggs set and cheese melts. Just before
serving, top with 1 8-oz jar of hot, medium, or mild salsa, according
to taste.

Lightly grease two 9-inch foil pie pans. Prepare 1 package of wild blueberry
muffin mix as directed except-pour batter into 1 pie pan. Invert second pan
over pan with batter. Secure rims with spring-type clothespins.

Place on grill 4 inches from hot coals. Cook 15 minutes on each side,
rotating pans occasionally to insure even baking. Makes 6-8 servings.

corn on the cob, not shucked
large bucket of water
charcoal fire

Cut the "hair" end of the corn off. Soak in
bucket of water for twenty minutes. Place
corn directly on coals, turning frequently.
Done in 10 to 20 minutes.

Bacon and Eggs in a Paper Bag

Two strips bacon (thick)
one paper lunch bag
one egg
one stick

Cut bacon strips in two, place at the
bottom of the paper bag, covering the
bottom. It is important that you have thick
strips of bacon as thin ones will stick and
adhere to the paper bag when cooked.

Crack egg and put in paper bag on top of
the bacon. Fold lunch bag down three
times and poke a hole through it with the
stick, so that the bag is hanging on the end
of the stick. Hold over charcoal and
watch the grease from the bacon protect
the bag and cook the meal.

1 1/2 lbs. salmon
1/2 soy sauce
1/2 cup olive oil
4 cloves chopped garlic

Combine oil, soy sauce and garlic and marinate salmon for 1 hour. Cook salmon over the fire
and you're in for a tastebud treat. Use the same ingredients and marinate some of your favorite
veggies and cook them over the fire for a wonderful side to go with the salmon.

Kelly~WA (10:46:20) : STEAK FAJITAS

4 tbsp. extra-virgin olive oil
1 tsp. ground cumin
1 tsp. chili powder
4 garlic cloves, crushed
Juice of one lime
1 lb. skirt or flank steak, sliced
2 peppers, cut into 2-in. pieces
1 red onion, cut into wedges
Flour tortillas

At Home: Combine olive oil, cumin, chili powder, garlic, lime juice, salt and pepper. Use this to
marinate steak and vegetables separately in sealable plastic bags. Chill. (You may want to
freeze the steak and pack it frozen).

At Camp: Thaw steak, if necessary. Heat grill. Thread meat, peppers, and onions onto
skewers, alternating as you go. Grill skewers, turning them frequently, for 5 to 8 minutes. Serve
with tortillas and desired toppings. Serves 4.

Ranch Style Dutch Oven Potatoes

30-35 golf-ball sized new red potatoes
1 medium onion
1/2 stick butter
1 pkg. dry ranch dip mix

Spray Dutch Oven with Pam spray. Wash potatoes,do not peel, cut in half and place in bottom
of Dutch oven. Chop onion and place on top of potatoes. Place chunks of butter on top of
potatoes and onions. Sprinkle Ranch dip mix over all.

Bake 30-45 minutes.

Kelly~WA (10:45:33) : TURKEY POT STICKERS

8 ounces lean ground turkey
Fresh ginger, peeled and minced
1 bunch. cilantro, chopped
4 scallions, chopped
2 to 5 tbsp. red chili pepper paste
Soy sauce
2 tbsp. extra-virgin olive oil
One package wonton wraps

At Home: Combine first 6 ingredients in a bowl. Season with soy sauce to taste. Place in a
plastic container and freeze.

At Camp: Defrost turkey mixture, if necessary. Lay wonton wraps on a flat surface. Spoon 1
tbsp. of turkey mixture onto center of each wrap; pinch edges closed. Heat olive oil in a
nonstick skillet. Place wontons in skillet and saute' until bottoms are golden brown. Add 3 tbsp.
of water to skillet, cover and let wontons steam 2 to 3 minutes. Remove wontons from skillet.
Serve with soy sauce. Yield: 24 pot stickers.

Kelly~WA (10:45:11) : FRIED BANANAS

1 banana for each person
1 spoonful of butter
2 spoonfuls of sugar
1 spoonful of cinnamon.

Put butter in pan. When butter is melted, put in bananas. Add sugar and cinnamon when banana
begins to brown. Eat!

Kelly~WA (10:44:53) : DUTCH OVEN COBBLER

1 box white or yellow cake mix
1 stick of butter
2 cups water
2 containers cinnamon apple pie filling

Line Dutch oven with foil. Empty pie filling into Dutch oven. Empty cake mix on top of pie mix
into Dutch oven and spread evenly. Add 2 cups water and butter. DO NOT MIX. Place Dutch
oven on 10 coals. Place 8 coals on lid of Dutch oven. Cook about 1 hour. Any type of pie filling
can be used. Cherry filling with chocolate cake makes a great combination! Yummie!

Kelly~WA (10:44:27) : Hobo Stew

Take heavy-duty aluminum foil, brush it with butter and add any or all of the following:

crumbled uncooked ground beef, turkey, or chicken
chopped potatoes (diced)
Onions (diced)
Carrots (sliced)
Green pepper (sliced)
Mushrooms (fresh only)
Garlic (lots!)
Ketchup (optional)
Salt & pepper
Dabs of butter.

Seal the foil into a packet. Put on the coals and turn a couple times to
keep from burning. Takes about 1/2 hour or less depending upon the
heat of the coals. YUMMY!!!

Kelly~WA (10:44:03) : Make Fudge in a Ziplock Bag

3 oz pkg of cream cheese
1 lb box of powdered sugar
2 packets of cocoa mix or 1/2 cup of cocoa
2 tablespoons of butter
2 1 gal zip lock storage bags

Place all ingredients in one of the zip lock
bags, close and put it in the next zip lock
bag. Give everyone a turn at squishing the
bags to mix. Mix until smooth... Enjoy!
