1 cup water 2 tablespoons butter or margarine 3 cups Gold Medal Better for Bread Flour 1/2 cup oats -- old fashioned 1/2 cup pecan halves 2 tablespoons sugar 2 tablespoons dry milk 1 1/4 teaspoons salt 1 1/2 teaspoons Fleischmann's Bread Machine Yeast
Measure carefully, placing all ingredients in the bread machine pan in the order recommended by the manufacturer.
Select Sweet or Basic/White cycle. Use Medium or Light crust setting. Push start.
Use of a delay timer is okay for this recipe.
Makes a 1 1/2 lb loaf

4 1/2 cups flour 1 cup brown sugar 1/2 cup sugar 4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 cups buttermilk 3/4 cup oil 1 1/2 tsp. vanilla 3 eggs
Combine flour, brown sugar, sugar, baking powder, baking soda and salt; blend well. In small bowl, combine buttermilk, oil, vanilla and eggs; mix well. Add liquid to dry ingredients; stir until just moistened. Cover tightly, refrigerate up to 5 days or bake immediately.
To bake: Heat oven to 375. Choose a variation below. Grease bottoms of muffin cups or use paper baking cups. In small bowl, place 1 1/3 cups batter. Fold in flavor ingredients. Fill cups 2/3 full. Bake 20-25 minutes. Use Cinnamon Topping (below) if desired.
Raisin Spice: Fold in 1/3 cup raisins, 1/2 t. cinnamon, 1/4 t. nutmeg, 1/4 t. allspice and 1/4 t. cloves.
Maple Walnut: Fold in 1/3 cup chopped walnuts and 1/2 t. maple extract.
Pineapple Coconut: Fold in 1/2 c. drained, crushed pineapple and 1/4 c. coconut.
Chocolate Chip: Fold in 1/3 c. miniature chocolate chips.
Mixed Fruit: Fold in 1/3 cup chopped mixed dried fruit.
Cinnamon Topping After baking, dip top of muffin in melted butter and then in a mixture of 2 tablespoons sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg.

If using a bread machine, add the ingredients in the order specified for your particular machine. If your machine has a double kneading cycle, remove the dough after an hour of rising and turn off your machine; allowing the dough to knead a second time causes bubbles which are difficult to roll.
If making by hand, proof the yeast in 1/4 to 1/3 of the water with a pinch of sugar. Then add the remaining liquid ingredients, mix well, then add the dry ingredients and stir until you can no longer work the dough with a spoon. Turn the dough out onto a well-floured counter, knead for 5 to 10 minutes, and allow to rise covered in a warm place for 50 to 60 minutes.
For a thin-crust pizza, roll the dough out 1/8 inch thick; slightly thicker at the edges. Turn the edges up slightly to prevent run-off in the oven, and place toppings no closer than 1/4 inch to the edge of the dough, preferably no closer than 1/2 inch.
