1 Vidalia onion, cut in rings 2 chicken breasts 1 tbs chipotle pepper in adobe (from can) 1/4 c honey 1/2 c chicken broth 1-2 tbs lime juice 1 peach or nectarine sliced ( canned ok) cornstarch
saute the onions in butter/olive oil till caramelized and remove from pan. Saute chicken breasts 20 min till cooked thru. Mix broth, honey,chipotle and adobe with nectarine and lime juice...add to pan...( you can add a little juice from canned fruit if used, too) add onions and deglaze the pan.. Cook till onions are limp ..add cornstarch thinned in a little water and cook 1 minute till clear and thick

6 medium green bell peppers 1 lb ground turkey 1 cup cooked rice 2 tbsp onion, minced 1 tbsp Worcestershire sauce 1 clove garlic, minced 1/4 tsp pepper 1 cup low-sodium tomato sauce 1/2 cup water 1 oz skim mozzarella cheese, shredded
Cut off tops of green peppers; remove seeds and membrane. Mix turkey with rice, onion, Worcestershire sauce, garlic, and pepper. Mix half of tomato sauce with turkey mixture, then spoon mixture into peppers; cover.
Place in microwave and cook 18 to 22 minutes, giving dish quarter-turn every 5 minutes. Add water and remaining tomato sauce.
Sprinkle cheese over each pepper. Recover and return to microwave. Cook 1 to 2 minutes until cheese melts.
To freeze: Place in microwave-safe container; label and freeze for up to 2 months. To serve: Thaw. Cover with microwave-safe plastic wrap, and cook on high 3 to 5 minutes.

1 lb. ground beef 1/2 tsp. salt 1 ( 1lb. 12 oz.) can pork and beans 2 tbsp. vinegar 1/2 cup onions, chopped 1/4 tsp pepper 1/2 cup ketchup 1 tbsp. Worcestershire sauce 1/4 tsp. Tabasco sauce ( I go easy on this) Brown beef and onion. pour off fat. Add remaining ingredients and mix well. Pour into a 1 1/2 qt. greased casserole baking dish. Bake in a 350 oven for 30 minutes. 1 lb. ground beef 8 flour tortillas 1 cup shredded cheese 2 cans cream of chicken soup 1 small onion 1 can Ro-Tel tomatoes with green peppers
Preheat oven to 350 degrees. Brown meat and onion. Drain. Place 2 flour tortillas in an oblong dish. Spoon meat mixture, tomatoes, and cheese on top of tortillas.Make 2 more layers. End with tortillas on top. Mix soup and enough water to make a liquid consistency. Pour over top. Bake for 30 minutes. Enjoy Your Meal!!!

3 cups onion -- chopped 2 cups celery with leaves -- chopped 2 cups bell pepper -- chopped 1/2 cup parsley -- dried/ crumbled 2 tablespoons Creole seasoning 4 pounds ground chuck 5 cans mushroom soup
Saute onion, celery, peppers until tender ( use oil if you wish). Add ground chuck saute until browned. Drain fat. Add soup, parsley, and Creole seasoning. Simmer 5 minutes. Cool.
Divide and freeze in 2-3 cup portions to be used to make quick casseroles. notes : *casserole ideas: beef/potato- layer potato slices, grated cheese and mix in baking dish. Top with cheese. Bake covered 45 minutes.
Rice/green bean-layer cooked rice, green beans, and mix in casserole. Top with bread crumbs. Bake until bubbly.
Mexican- add 1 can rotel to mix. Layer in casserole with niblet corn, chili beans, cheese, crushed corn chips or rice and mix. Top with chips and cheese. Bake until bubbly.
Italian-add 1 can Italian tomato sauce with mix. Add 1/2 teaspoon Italian seasoning, 1/2 cup parmesan cheese and 3 cups cooked spaghetti. Top with parmesan. Bake until warmed through.
Mac/cheese- stir together cooked macaroni, Velveeta and casserole mix add steamed broccoli if you wish.

2 pounds hamburger -- cooked and drained 2 cans cream of chicken soup 2 cans Ranch style beans 2 cans Rotel 2 cups cooked rice
Mix ingredients together , put in casserole dish. Top with cheese and crushed corn chips. Bake on 350 for 20 minutes.

Down Home Grilled Hamburgers Recipe By : Jo Anne Merrill Serving Size : 4 1/2 cup sour cream 3 green onions -- chopped, with tops 3 tablespoons bread crumbs 1/2 teaspoon Worcestershire sauce 1/2 teaspoon lemon pepper 1 pound lean ground beef 4 hamburger buns shredded lettuce 1 tomato -- 4 slices/hamburger 1 yellow onion -- 4 slices/hamburger 2 teaspoons mustard 1 tablespoon mayonnaise 1 tablespoon catsup
1. Prepare white or yellow sweet onion by slicing in thick slices, place in plastic bag or glass jar with ice water, seal and refrigerate until ready to use. This makes the onions very crisp and juicy.
2. Slice a vine-ripened tomato into thick slices. Mix sour cream, chopped green onions, bread crumbs, Worcestershire sauce and lemon pepper seasoning. Mix this in with the ground meat until combined well. Shape into 4 patties.
3. Cooking the hamburger patties: GRILL: Place meat on grill over hot coals and cook to desired doneness, turning only once or twice. BROIL: Place meat in broiler pan; broil to desired doneness. 1 pound ground beef 1 cup salsa 1/4 cup ripe olives 1 can green chiles -- chopped 1 package pie crust -- 2 crust 1 1/2 cups cheddar cheese -- grated
brown beef in a large skillet. Drain. Stir in salsa, olives and chilies.
Place one pie crust on ungreased cookie sheet. Spoon hamburger mixture evenly onto crust to within 3/4" of the edge. Sprinkle cheese over beef. Moisten edge of crust with a little water. Put the other crust on top and seal the edges with a fork. Cut several slits in top to allow steam to escape.
Bake at 425 degrees for 17-27 minutes or until crust is golden.
Serve with optional toppings--any or all!

1 pkg. (25 oz.) frozen ravioli (any type filling) 1 Tblsp. olive or vegetable oil 1 cup prepared pizza sauce 1 tsp. Italian seasoning 1 pkg (3.5 oz.) sliced pepperoni 1 cup (4 oz.) shredded mozzarella cheese Grated Parmesan cheese (optional)
DIRECTIONS: Prepare ravioli according to package directions; drain. Arrange ravioli in a single layer in a greased 11x7x1-1/2-inch baking dish. Brush pasta with oil. Spoon pizza sauce evenly on top of ravioli; sprinkle with seasoning. Top with pepperoni and mozzarella. Bake at 450 degrees F. until cheese is hot and bubbly, about 5 minutes. Sprinkle with parmesan cheese if desired.
Yield: 4-6 servings.

1 lb. lean ground beef 1/2 cup bbq sauce 1 can refrigerator biscuits 3/4 cup grated cheddar cheese
Brown meat, drain. add bbq sauce and set aside. place biscuits in ungreased muffin cups, pressing dough up side of edge of cup. spoon meat mixture into cups. sprinkle with cheese. Bake at 400 degrees for 12 minutes
