Recipe: Homemade Dried Cranberries

1 (12 oz.) pkg. fresh cranberries
2/3 cup Simple Syrup (recipe follows)

SIMPLE SYRUP
1/2 cup sugar
2/3 cup water

Simple Syrup: In small saucepan, stir water and sugar well. Cook mixture over medium-high heat, stirring, for about 2-3 minutes or until the sugar is completely dissolved. (Alternatively, microwave in a microwaveable measure at High for 1 minute; stir until sugar is dissolved.

Oven Method: Wash and pat dry fresh cranberries; using sharp knife; cut each berry in half. In bowl, stir berries with syrup, let stand for at least 1 hour or overnight. Spread on lightly greased baking sheet, reserving simple syrup. Bake in 175ºF oven for 1 hour; drizzle with reserved syrup, stirring to coat. Bake for 2 hours or until cranberries are wrinkled and dehydrated but still soft and pliable. Transfer to cool baking sheet, plate or board; let stand, uncovered, in cool, dry place for 12 hours. Wrap up cranberries tightly;
refrigerate or freeze them for up to 2 months.
