1 wheel brie
Dried apricots
Dried prunes
Walnuts
Brown Sugar
Orange rind
1 pkg. Crescent Rolls

Slice the brie in half and sprinkle one half with chopped dried apricots, chopped dried prunes, chopped walnuts, brown
sugar and orange rind. Put the other half back on top. Open out the crescent rolls (they should form a rectangle.) Place the brie on the crescent roll and wrap the ends of the crescent roll over to encase the Brie. Turn over and place in a pie plate and bake for about 15 minutes at 375 or until the crescent rolls are done. Serve with crackers.

Creole Bread Pudding with Bourbon Sauce

1 loaf 5 day old Challah bread (egg bread)
1/2 gal. milk
1 1/4 lb. sugar
1 ounce vanilla extract
1/2 cup pecan pieces
1/2 cup raisins
1/2 lb. butter, melted
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
8 eggs

Preparation:
Bread Pudding: Crumble bread in greased 11 1/2" X 9" baking pan. Mix eggs,
milk, sugar, vanilla, and spices. Add raisins and pecans to this, and pour
over bread. Mix together by squeezing through your hands, then pat flat.
Bake in a water bath in an oven preheated to 375 degrees for about one to
one and a half hours, or until a knife comes out clean. Serve with Bourbon
Sauce.

Bourbon Sauce Ingredients:

1 lb. butter (microwaved 10% for 3 1/2 minutes)
2 cups sugar
4 egg yokes
6 ounces water
3 ounces Bourbon

Place egg yolks and butter in food processor. Mix sugar and water, and
heat slowly until liquid starts to bubble. With food processor running,
slowly drizzle the sugar-water syrup into the mixture until smooth. Add
Bourbon and blend. Store at room temperature.

Almond Joy Cheesecake

This recipe is courtesy of Castle River Inn Wichita, KS
Crust: 9 ounces (about 20) Oreo cookies
1/4 cup sugar
6 tablespoons unsalted butter, melted

Preheat oven to 350 degrees. Finely process cookies and put in 9" spring form pan. Add sugar, stir. Add melted butter, stir. Press crust evenly on bottom and halfway up side of pan. Bake at 350 degrees for about 10 minutes, until crust is set.

Filling:
2 pounds cream cheese
1 1/2 cups granulated sugar
1 tablespoon almond extract
4 eggs, room temperature
5-8 Almond Joy candy bars cut into 1/2" pieces

Beat cream cheese and sugar together until smooth. Add extract. Add eggs one at a time, beating after each addition. Fold in candy bars. Pour filling into crust and bake about 1 hour or until middle is set. Serves 12-16
Variation: Cookies & Cream Cheesecake In the filling, substitute vanilla extract for almond extract, add 1/4 cup heavy cream and use 9 ounces of Oreo cookies instead of candy bars. Hints: * Place a pan filled 1 inch of water on lower rack in oven during baking. *Chill cheesecake completely before removing from pan. To remove from pan, cut around cake with dull knife. Slide very large knife under crust and loosen all around before transferring to serving plate. * Cut cheesecake with large knife, dipping the knife in hot water before each cut.

BBQ Marinated Flank Steak

1/4 cup soy sauce
3 tablespoons honey
2 tablespoons distilled white vinegar
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 cup vegetable oil
1 1/2 pounds flank steak

Combine soy sauce, honey, vinegar, ginger, garlic powder, and vegetable oil in an electric blender. Blend for 15 seconds.

Lay steak in a shallow glass or ceramic dish. Pierce flesh all over front and back with a sharp fork. Pour marinade over steak, and then turn and coat the other side. Cover, and refrigerate overnight.

Preheat grill for high heat.

Place grate on highest level, and brush lightly with oil. Grill for 15 to 20 minutes, turning once. Check for doneness.

Serves 4

LEMON BASIL HERBED RICE

Serving Size : 4

2 tb Butter
3 tb Onion, finely chopped
1 c Rice, uncooked
1/4 c Lemon basil, chopped/fresh
1 sm Bay leaf
1 tb Parsley, chopped
Tabasco sauce to taste
2 1/2 c Chicken stock
Salt & white pepper to taste

Preheat oven to 400 degrees F. Melt the butter in an ovenproof saucepan. Add the onion and cook until it is softened and translucent--about 5 minutes. Add the rice and cook, stirring, over medium heat for 3 minutes. Add lemon basil, the bay leaf, parsley, Tabasco and stock. Bring to boil, cover tightly and transfer to the oven. Bake 20 to 25 minutes or until rice is tender. Remove the bay leaf. Add salt and white pepper to taste. With a fork, fluff rice and serve.

FARM-STYLE LEEK SOUP

2 lg Leeks (1 lb) with part of
green tops -- sliced
2 md Onions, sliced
1 lg Clove garlic, minced
1/4 c Butter
4 c Chicken stock
2 c Uncooked noodles (3 oz)
1 Bottle beer
1 1/2 c Shredded semisoft cheese (eg Muenster)
Salt and pepper

Cook leek, onion and garlic in butter for 15 minutes, using low heat and stirring often. Add stock, cover and simmer 30 minutes. Add noodles, cover and simmer 15 minutes, or until noodles are tender. Add beer and heat to simmering. Gradually add cheese, cooking slowly and stirring until melted. Season to taste with salt and pepper.

Fake Aunt Jemima Maple Syrup

2 cups water
1 cup sugar
2 cups dark corn syrup
1/4 tsp salt
1 tsp maple flavoring

Combine the first four ingredients in a saucepan over med. heat. Stir occasionally, until the mixture comes to a full boil. Let it boil for 7 min. Turn the heat off and let the syrup cool for 15 min. Add the maple flavoring and stir. When completely cool, transfer the syrup to a covered plastic or glass container. VARIATION: For syrup with a butter flavor, just add 3 tbsp. of butter to the mixture before heating. For a lighter syrup, use a sugar substitute instead of the regular sugar.

Fajita Chicken Wings

12 chicken wings

Marinade
1/4 cup lime juice
2 tablespoons oil
3 tablespoons cilantro -- chopped
1 cloves garlic -- minced
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon red pepper flakes -- crushed

Cut each chicken wing in half; place in large resealable plastic bag. Add all marinade ingredients; seal bag. Turn bag to coat wings. Refrigerate at least 4 hours or up to 24 hours, turning bag occasionally.

Heat oven to 375 F. Drain chicken wings, reserving marinade. Place chicken on broiler pan. Bake at 375 F. for 45 to 60 minutes or until chicken is no longer pink, brushing occasionally with reserved marinade.

Discard any remaining marinade.
