12 oz butterscotch chips 14 oz can Eagle Brand milk 1 1/2 c. miniature marshmallows 2/3 c. chunk peanut butter 1 tsp vanilla 1 c. chopped peanuts
In large pan, over low heat, combine the first 3 ingredients. Stir until melted. Add the peanut butter, vanilla, and nuts. Pour into a buttered 9 x 13 pan. Refrigerate until firm. Cut into squares.

1 can of chocolate frosting mix 1 12oz package of choc chip nuts
Melt chips and frosting together over hot water. Add nuts if desired. Pour into a 9 x 9 buttered pan. Cool and cut into squares.
I have not tried this but heard it is really good.

FIG PERSERVES
5lb. Figs 4lbs. sugar 1 lemon, sliced thin 1/2 tsp. salt Peal figs, leaving the stems on
Put in vessel they are to be cooked in,with the sugar, lemon & salt.& place in refrigerator overnight. Next morning there will be agood syrup-& no water is needed.Skim when necessary but do not stir as the figs are easily broken up. Boil until they are transparent & the syrup is thick. PORK TENDERLOIN
1-1/4 lb. pork tenderloin (2 pieces) 1/4 c. orange juice 1-1/2 T. soy sauce (try to use low sodium) 2 t. (about) olive oil 2 large garlic cloves, crushed 2 fresh rosemary sprigs 2 fresh thyme sprigs Black pepper
Place pork, OJ, soy, 1 t. oil, garlic, rosemary and thyme in a shallow nonaluminum dish. Season with black pepper. Turn pork to coat well. Cover and refrigerate 1 to 6 hours, turning pork occasionally.
Remove pork from marinade and wipe dry with a paper towel. Bring marinade to a boil in a small saucepan. Set aside. Heat remaining 1 t. oil in a large heavy nonstick skillet over medium-high heat. Add pork and brown on all sides, about 5 minutes. Transfer to a baking dish. Roast at 375 degrees F. for about 20 minutes for medium. Baste twice with marinade during roasting. Let rest 5 minutes before carving.

I almost hate to post this because it's so simple! I make it as needed but don't see any reason it wouldn't can or freeze also, though it would lose that wonderful fresh unprocessed taste.
Basic recipe which we will devour fresh at one sitting:
2 ripe garden fresh medium tomatoes (I use the whole thing, peels and seeds included) 1 medium white onion jalapeno chiles - 2 or more depending on your taste for fire (remove veins and seeds if you like less bite) 1/4 cup chopped parsley or cilantro 3 tablespoons FRESH lime juice, or more to taste if you like 1/2 teaspoon salt, or more to taste
Just dice the tomatoes, onion and chiles into a bowl, stir in the parsley, lime juice and salt - taste and add more lime juice and/or salt. That's it. Dig in with tortilla chips and make it your salad course. I also love it on cottage cheese - sort of a cottage cheese and tomato salad with a kick)

Simple Dinner in One Hour
Rib-Eye Steak on the Grill Baked Sweet Potato with Brown Sugar, Butter and Cinnamon Fresh Green Beans Southern StyleTonight I did not get home till 6PM and had to think of something to cook by 7PM as I was famished! I popped two sweet potatoes in the oven after buttering them up and putting foil on them, 350 for 1 hour. I took them out and put butter, cinnamon and brown sugar on them .
I marinated rib-eye steaks in garlic powder, onion, powder and slathered garlic butter on them so that I could grill them the last 15 minutes. Meanwhile, I washed and snapped the end off fresh green beans, put 2 strips of bacon in a pot with a splash of olive oil and 1/2 cup up onion and 1 minced garlic, sauteed that, threw the beans in with 1 cup water and put on med-low till tender.
We ate the most delicious dinner in an hour! No dessert tonight, too many lately!! This was better than Roadhouse Grill the other night!! Yum Yum!!!

Recipe(tried): Simple Roast Chicken Dinner

I make this all the time. It is easy and very good. Nice leftovers.
Preheat you oven to 350-degrees. Take a whole chicken, about 3-1/2 pounds, rinse with water and pat with a paper towel. Sprinkle salt and pepper in the cavity. Cut a lemon in half and place in the cavity. Place in a pan and set in the oven to roast for 1-1/2 hours.
Cut up several potatoes into chunks about one inch across. Place in a pan. Drizzle with about 1 Tablespoon oil (olive oil is best). Sprinkle with salt and pepper. Add 3 cloves of coarsely chopped garlic if you like. Place in oven and roast along with the chicken, stirring from time to time. Cook 1 to 1-1/2 hours.
Take 2 handfuls of fresh green beans and cut into pieces about 1-1/2 inch long. Boil water in a medium sized pot, and add the green beans. Simmer for about 7 minutes. Drain and set aside.
When chicken is done, let sit for about 5 minutes while you finish the green beans. Melt 1 Tablespoon of butter in a saucepan, add the beans and stir until heated. Add juice of 1/2 a lemon. Serve.
