Here is one of my favorite recipes for meatloaf. Many may wonder about the use of sauerkraut, but trust me on this. This meatloaf is great, and healthy too. It makes great sandwiches. I had one for lunch today. This also makes a wonderful sausage. For that just stuff the mixture into casings.
2 lbs ground turkey 1 egg, lightly beaten 1 (16 oz) can sauerkraut, rinse and drain if you want - I don't 3/4 cup bread crumbs, from rye if possible 2 tsp caraway seeds
Mix all ingredients together and place into a loaf pan. Bake at 350 degrees F for 1 1/2 hours. Periodically pour off accumulated fat. I normally check for doneness with an instant-read thermometer and cook the loaf to about 170 degrees F. |
