Sweet Potato Chips

1/4 cup margarine
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
4 sweet potatoes
4 tbsp parmesan cheese

Heat oven to 425 degrees F.

Lightly grease 15x10-inch cookie sheet. In small pan, melt butter. Stir in salt, pepper and paprika. Peel sweet potatoes and slice thinly. Arrange potato slices on cookie sheet evenly. Brush butter mix over potatoes. Bake for 25-30 minutes or until crisp and golden (turn twice so slices brown evenly). Sprinkle with cheese. Serve immediately.

NOTE: Diabetics might want to try this recipe like this. Spray a cookie sheet with a nonstick vegetable spray. Peel and thinly slice the sweet potatoes and arrange on the prepared cookie sheet. Using a butter-flavored cooking spray, lightly spray the potato slices. Sprinkle with salt, pepper and paprika. Turn slices and repeat. Bake as directed.
