Crab Quesadillas

1/3 cup butter
1/4 cup safflower oil
1 clove garlic
1/2 medium-sized onion, chopped
2 jalapeno peppers, stemmed, seeded and finely diced
1 pound lump crab meat, washed, gently
1 teaspoon minced cilantro
16 flour tortillas
4 ounces Monterey Jack cheese, shredded
salt to taste

Heat butter and oil in medium saucepan until butter is melted. Pour all but 2 tablespoons into a small cut and set aside. Add garlic and onion to the remaining oil mixture and saute over medium heat 2 minutes until translucent. Remove from heat and add jalapenos, crabmeat, mayonnaise, salt and cilantro. Mix well and set aside. Heat a nonstick skillet over medium high heat for about 2 minutes. Spread tortilla with mixture, top with cheese and another tortilla. Spray Pam in skillet and place tortilla in, brush other side with butter mixture and cook until golden brown on both sides. Repeat. Cut in triangles. Serve with picante sauce, sour cream and guacamole.
