Stylish but easy - When it comes to garnishing food, follow this golden rule: Keep it simple. Dress up main dishes with a simple sprig of fresh herb and desserts with a dusting of unsweetened cocoa powder. For added flair, accent salads with a ruffled leaf of kale or leaf lettuce. Add interest to foods by cutting them into eye catching shapes. For example, lias-slice carrots or shred fresh spinach.
Grill Time: 8 to 10 minutes Servings : 12
1/4 cup ReaLime Lime Juice from concentrate 1/4 cup bottled Italian salad dressing 1 tablespoon reduced-sodium soy sauce 1 pound skinless, boneless chicken breast halves 1/3 cup purchased unsweetened coconut milk 1/4 cup creamy peanut butter 3 tablespoons ReaLime Lime Juice from concentrate 2 tablespoons reduced-sodium chicken broth 2 cloves garlic, finely chopped 1/8-1/4 teaspoon ground red pepper
1. Combine 1/4 ReaLime, salad dressing and soy sauce in small bowl. Set aside.
2. Rinse chicken; pat dry. Slice chicken across grain into 3-inch-long strips 1/4 to 3/8 inch thick, thread chicken, accordion-style, onto twelve 6-inch metal skewers, Set aside.
3. For sauce, combine coconut milk, peanut butter, 3 tablespoons ReaLime, broth, garlic and red pepper in small saucepan. Cook and stir over mediumheat until slightly thickened, smooth and bubbly, keep warm.
4. Grill kabobs on rack of uncovered grill directly over medium coals 8 to 10 minutes or until chicken is tender and no longer pink, turning once and brushing often with soy mixture during last 5 minutes of cooking.
5. Or, broil on unheated rack of broiler pan 4 to 5 inches from heat 8 to 10 minutes, turning once and brushing often with soy mixture during last 5 minutes of cooking.
6. Serve sauce with kabobs. Garnish with crushed red pepper if desired. |
