While vacationing in Italy, I devoured hundreds of cookies at a wonderful bakery in Ponticello. I discovered the recipe for the bakery's orange cookies in a newsletter not far from the bakery. I had it translated and now I make them all the time at home in NY. They're slightly sweet and dry - perfect for coffee or breakfast. I even made tiramisu using those orange cookies in place of the traditional ladyfingers.. very delicious.
Turn oven on to 350 degrees.
In bowl, mix together: 2 eggs 1 cup sugar Then add: 1/2 cup butter (softened) Blend well.
In different bowl, mix together: 4 cups flour 2 tablespoons baking powder a pinch of salt
Gradually add the flour mixture to the egg mixture.
Mix 1/2 cup milk with: 1 teaspoon orange extract and mix in the batter. The dough will form into a ball.
Form cookies by taking pieces of dough and roll them into balls the size of golf ball (about 1 heaping Tbsp. dough for each cookie). Place them on wax paper-lined baking sheet and bake till done. Lightly golden in color. About 10 minutes. Let them cool.
