Cucumber and Tomato Sandwich Makes 8 sandwiches
16 slices bread 1/4 cup butter, softened 1 (8 ounce) pkg. cream cheese, softened 1 cucumber, peeled and thinly sliced 1/4 teaspoon freshly ground black pepper 3 medium tomatoes, thinly sliced 1/4 teaspoon salt
Spread each bread slice with butter. Trim the crust from the bread. On eight slices, spread a thin layer of cream cheese. Then arrange the cucumber slices on top of the cream cheese. Sprinkle cucumbers half's with ground pepper.
Then arrange the tomatoes over the cucumbers and ground pepper. Lightly salt the tomato slices. Cover the cucumber and tomatoes with the remaining buttered slices. Cut each sandwich into quarters.
Place the sandwiches on a serving plate and wrap with plastic wrap. Place in refrigerator to chill for 30 minutes and serve.
Picnicking and Tailgating: Place chilled sandwich platter into an ice chest. When ready to serve, unwrap and serve.
