Wet Bread Pie From: Mrs. C. S. Morgan, TV; 1971
1 8-inch baked pie shell 1 cup wet bread* 1 cup granulated sugar 3 eggs, separated juice of 1 large lemon 2 tbsp butter 3 tbsp sugar
In top of double boiler mix wet bread, 1 cup sugar, egg yolks, lemon juice, and butter. Cook until thick, stirring occasionally. Pour into baked crust. To with meringue made with the egg whites and 3 Tbsp sugar. Bake in 350 degree oven for 15-20 minutes, until browned.
*To prepare wet bread remove crust from bread and dip in bowl of water until it absorbs enough water to wet thoroughly. Squeeze out the water and measure 1 cup (do not pack tight when measuring).
