Amish Vanilla Pie From: Farm Journal's Great Home Cooking In America
1 unbaked 9-inch pie shell
PIE FILLING: 1/2 cup brown sugar, firmly packed 1 tablespoon flour 1/4 cup dark corn syrup 1 1/2 teaspoons vanilla 1 egg, beaten 1 cup water
CRUMB TOPPING: 1 cup flour, unsifted 1/2 cup brown sugar, firmly packed 1/2 teaspoon cream of tartar 1/2 teaspoon baking soda 1/8 teaspoon salt 1/4 cup butter or regular margarine
Prepare pie filling: Combine 1/2 cup brown sugar, 1 tablespoon flour, corn syrup, vanilla, and egg in 2-quart saucepan. Slowly stir in water. Cook over medium heat, stirring constantly, until mixture comes to a boil. Let cool.
Prepare crumb topping: Combine 1 cup flour, 1/2 cup brown sugar, cream of tartar, baking soda, salt, and butter; mix until crumbly.
Pour cooled pie filling into pie shell; top with crumbs.
Bake in 350 oven 40 minutes or until golden brown. |
