1 cup dried blackeyed peas 4 slices bacon 1/3 cup wine vinegar 1 cup vegetable oil 1 clove of garlic, crushed 1/2 tsp pepper 1/2 tsp pepper sauce 1 tsp savory salt
soak peas overnight. Add bacon. Simmer until peas are tender but not mushy. Drain. Combine remaining ingredients; marinate drained peas in vinegar mixture for 5 days. Drain thoroughly. Serve on thin slices of cornbread.
