Chocolate Pinwheels Recipe By : Gold Medal Holiday Cookies, 2000 Makes : 48
1 1/2 cups powdered sugar 1 1/4 cups butter -- softened 1 egg 3 cups flour 1/4 teaspoon salt 1/4 cup cocoa 1 tablespoon chocolate sprinkles if desired -- plus 1 teaspoon
Beat powdered sugar, butter and egg in a large bowl. Stir in flour and salt. Divide the dough in half. Stir cocoa into one half. Stir chocolate sprinkles into the other half. Cover and refrigerate 1 hour.
Roll half of the plain dough into a 9x8-inch rectangle on a lightly floured surfacae. Repeat with half of the chocolate dough; place on top of the plain dough. Roll doughs up together tightly, beginning at the long side. Repeat with the remaining plain and chocolate doughs. Wrap and refrigerate at least 8 hours but no longer than 24 hours.
Heat the oven to 400 degrees. Cut rolls into 1/4-inch slices. Place the slices about 1-inch apart on ungreased cookie sheets. Bake for 8-10 minutes or until set. Immediately remove from cookie sheet to a wire rack.
